Apple Cinnamon Tortilla Bowls Capitalize on fabulously fresh, crisp juicy Ontario Apples by preparing this yummy topping. For a fun presentation serve the warm apple topping over frozen vanilla yogurt scooped into edible, cinnamon –scented tortilla “bowls”. For brunch try this delicious apple topping over pancakes, waffles, crepes or French toast; serve with breakfast sausages or ham. |

6 inch (15 cm) whole wheat tortillas sugar ground cinnamon butter Ontario Apples peeled, quartered and sliced crosswise ¼ “ (5 mm) thick Ontario Apple Cider cornstarch vanilla extract each nutmeg and cinnamon frozen vanilla yogurt toasted chopped pecans (optional) |

Lightly brush one side of each tortilla with water. Combine sugar and cinnamon; sprinkle over moistened side of tortilla. To avoid air pockets, randomly pierce tortillas with a fork. Place each tortilla over inverted 4-inch (10 cm) bowl and lightly press around the bowl. Microwave 2 tortillas on High for 2 minutes or until crisp. Remove from bowls and cool on rack. Repeat with remaining 2 tortillas. (Tortilla bowls can be prepared up to 2 weeks ahead; store in an airtight container.) In medium saucepan melt butter, stir in apple slices cook over medium heat, stirring occasionally 4-5 minutes or until apples are tender. Sprinkle cornstarch over apples, stir in apple cider, vanilla, nutmeg and cinnamon and simmer until sauce comes just to a boil, about 2-3 minutes. Set aside to cool. To serve, place tortilla bowl on serving dish, place a ½ cup (125 mL) scoop of vanilla yogurt and divide apple topping. Sprinkle with pecans. Make ahead: Apple Topping can be prepared up to two days ahead, covered and refrigerated. When ready to serve reheat in microwave.
