Black Bean Salsa
(From Dietitians of Canada, Cook Great Food, 2001, Robert Rose Publishing)
Ingredients:
1 can (19 oz/540 mL) black beans, drained and rinsed
1 cup drained canned corn kernels
1 cup diced tomatoes
1 tbsp extra virgin olive oil
2 tbsp lime juice or cider vinegar
2 tbsp finely chopped fresh cilantro or parsley
½ tsp minced garlic
1/9 tsp black pepper
1. Combine all ingredients in a medium bowl and gently toss together.
