CHILLED STRAWBERRY SOUP

1 quart strawberries, washed and hulled
½ cup white wine
½ cup apple juice
½ cup sugar
¼ cup fresh lemon juice
1 cup buttermilk or plain yogurt
Fresh mint leaves to garnish

Set aside eight strawberries for garnish. Puree remaining berries in food processor or blender with wine and apple juice. Stir in sugar, lemon juice and buttermilk, or yogurt. Chill before serving. To serve, pour into wine glasses and garnish with mint leaves and strawberries slices.
