Chocolate Lover's Cheesecake

2 - 250g. cream cheese, softened
1/2 cup sugar
1/2 tsp. pure vanilla extract
2 eggs
4 - 1 oz. squares semi-sweet baking chocolate, melted and slightly cooled
1 pkg brownie mix (8 x 8-inch pan size)

Prepare and bake the brownie mix according to package directions and place in a 9-inch spring form pan. Cool.

Mix cream cheese, sugar and vanilla until well blended. Stir in melted chocolate.

Pour over brownie crust.

Bake at 350 F. for 35 to 40 minutes or until center is almost set. Cool and refrigerate 3 hours or overnight. Decorate with chocolate shavings or crumbled Skor chocolate bars. Serves 8 to 10.


VARIATION:
Chocolate Truffle Cheesecake
Follow recipe for Chocolate Lover's cheesecake. Add 2 tablespoons of Kahlua coffee liqueur with the melted chocloate. Using a 9-inch spring form pan, pour over brownie crust and bake as per recipe instructions.
