Grilled Apple With Caramel Sauce
4 sweet aples (Macintosh, Ida Red, etc.) Prepare Caramel sauce according to recipe. This can be prepared ahead of time and reheated just before serving. Core the apples and use a sharp knife to cut them into 3 or 4 thick slices. Lace apples in a bowl of water with lemon juice. Drain and pat dry and set aside. Brush raisin bread with melted butter on both sides. Preheat grill for 5 minutes. Place apples on a well oiled grill and sprinkle with brown sugar, close lid. Cook for 2 to 3 minutes or until just starting to brown. Remove and set aside. Place raisin toast on grill and close lid. Grill for 2 minutes. to serve, arrange the apple slices over the toasts and drizzle them with caramel sauce. Serve hot with ice cream. CARAMEL SAUCE
1 cup white sugar Combine the first 4 ingredients in a medium saucepan. Mix well. Stir and cook until mixture begins to boil. Cook, without stirring, exactly 2 minutes over moderate heat. Remove from heat, add vanilla and walnuts, if using. Keep warm until ready to use. Makes 2 1/2 cups.
