Lucky Sweet Spud Muffins

2 cups (500 mL) 1/4 cup (50 mL) 1 tbsp (15 mL) 1 tsp (5 mL) 1/4 tsp (1 mL) 2 1 cup (250 mL) 1 cup (250 mL) 1/3 cup (75 mL) 1/4 cup (50 mL) 1/2 cup (125 mL) 1/4 cup (50 mL) Topping: 1 tbsp (15 mL) 1/4 tsp (1 mL) |
all-purpose flour wheat germ baking powder five-spice powder or cinnamon salt eggs well-mashed cooked Ontario Sweet Potato 2% milk each packed brown sugar and vegetable oil Ontario maple syrup raisins chopped pecans each packed brown sugar and finely chopped pecans five-spice powder or cinnamon |

Write fortunes on 3 1/2 x 1/2-inch (9 x 1 cm) strips of paper; fold into quarters. Lightly spray nonstick muffin pans with vegetable spray or line with paper liners. In large bowl, whisk flour, wheat germ, baking powder, five-spice powder and salt. In separate bowl, whisk eggs, sweet potato, milk, brown sugar, oil and maple syrup until smooth. Pour over dry ingredients and stir until just moistened. Stir in raisins and pecans. Spoon into prepared muffin pan, filling cups halfway. Insert fortune and top with remaining batter. Topping: In small bowl, combine brown sugar, pecans and five-spice powder; sprinkle over muffins. Bake in 400°F (200°C) oven for 20 minutes or until tops are firm to the touch. Let cool in pan for 10 minutes. Transfer to rack to cool completely. Tip: To prepare sweet potato (about 12 oz /375 g), scrub and pierce with knife in several places. Microwave at High for 6 to 8 minutes or until tender. Let cool enough to handle; remove skin and mash with potato masher until smooth.
